Monday -Crock Pot
Red beans & Rice and Corn
- 1 lb dried red beans
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 2 celery ribs, chopped
- 3 garlic cloves, minced
- 2 (14 1/2 ounce) cans beef broth
- 2 cups water
- 1 lb Hamburger
- 1 teaspoon salt
- 1/2 teaspoon hot pepper sauce
- 3-4 cups cooked rice
Soak beans in water to cover overnight, drain, and rinse OR in a large pot, cover beans with 3 times their volume of water and bring to a boil. Boil for 10 minutes. Remove from heat, cover, and let stand for 1 hour. Discard water. Combine all ingredients except rice in crock. Cover and cook on low for 10 to 12 hours or on high for 5 to 6 hours. serve over hot cooked rice.
Chicken and Rice (curry) and Green Beans
- -8 chicken thighs (or breasts, or legs)
- 1 cup rice
- 3 1/4 cups water
- 1/2 cup liquid honey
- 1/4 cup mustard
- 1 teaspoon curry powder
- 1/4 teaspoon rosemary or oregano 1/2 teaspoon salt, divided
Preheat oven to 375 degrees F. Place chicken in a oven safe dish. Mix honey, mustard, curry powder and salt in a dish or cup. Pour over chicken, making sure to coat every yummy inch. If you like things hotter, just add more curry powder.Place chicken in oven, and set time for 50 minutes. In a new oven safe dish, mix rice and water. Place beside chicken in hot oven. When timer rings for chicken, they’re both good to go..
Easy Italian Beef stew
- 2 lbs Stew meat
- 2 medium onions, chopped
- 1 large sweet red pepper, cut into chunks
- 1 (14 ounce) jar spaghetti sauce
Layer beef, onions, and peppers in crock pot. Pour spaghetti sauce on top. Cover and cook on low 9-10 hours. Serve over hot cooked pasta.
Hamburger and Rice casserole from the Freezer. Corn
This is what I call ummm…sumthin. The whole point is to use what you have on hand. The basic concept is:
Cook 1lb of hamburger, drain. Add onions. Meanwhile add 2 cups rice (depending on family size) to greased casserole dish. Now the creative part: What so you have on hand? A can of mushroom soup? Milk, flour, and butter? some left over vegetable beef soup? Cheese? I have used a can of Mushroom soup and 2 cups H2O, I have made a white sauce with cheese …The important point is to use approx 4 cups of Something liquid. (Just cheese sauce doesn’t cut it, we need liquid to cook the rice.) So If you make cheese sauce (1 tbl butter, 1 tbl flour, 1 C milk, and cheese) use that plus 3 cups water? Does that make sense? Mix it all together in you casserole dish (don’t forget the hamburger) and bake at 350, covered for about 1 hour. Check and stir as needed. When your family asks whats for dinner you say “ummm sumthin.”
I have home made pizza sauce in the freezer, Mozzarella in the freezer and I make the crust. If your budget allows Order out! Or, you can use any version of store bought sauce, dough etc that your family likes.
