Wekly Menu-3.29.10-4.4.10 March 22, 2010

Monday-

BBQ Lentils, Green beans, & Corn Bread

Ingredients

  • 2 1/3 C dried Lentils
  • 5 C water
  • 1/2 C Molasses
  • 2T brown Sugar
  • 1 T vinegar
  • 1/2 C Ketchup
  • 1 Tsp Dry mustard (more or less to taste, I will use a bit less)
  • 1 T worcestershire sauce.
  • 16 oz tomato sauce
  • 2 T minced onions
  • 1/4 tsp liquid smoke (optional, I don’t ever add this to things because I never have it)

Directions

Add lentils to water, bring to a boil and simmer for 3o min.  Add all other ingredients, and bake at 350 for 45 min. Recipe says it makes 8 servings.  

I will probably add bacon to the top before I cook it.

This is my families fav corn bread recipe, it is so good with the Gianforte corn meal I get via CNY Bounty.

Tuesday- 

Carrot Soup,(recipe courtesy CNY Bounty) Salad & Bread

Ingredients

  • 2T butter
  • 1 C chopped onion
  • 1 Lb large carrots, diced (about 2 2/3 Cups)
  • 2 C chicken Broth
  • 1 1/2 tsp cumin seeds
  • 1 T honey
  • 1 tsp lemon juice
  • 1/8 tsp all spice
  • 1/2 C plain yogurt

Directions

Saute onions, carrots until soft add chicken broth simmer for 20 minutes.  Saute cumin seeds, grind in mill. (I will skip this I am sure)  Remove soup from heat. Puree in batches in blender until smooth. (I don’t own a blender so I will be mashing by hand) Return to same pan. Whisk in honey, lemon juice, and allspice. Season with salt and pepper. Ladle soup into bowls. Drizzle yogurt over; sprinkle generously with cumin.

Beef Shanks, Potatoes, Salad, bread

I am going to use this recipe for the beef shanks with modifications.

Thursday

Tuna sandwiches, Jell-o, & carrot sticks

On home made bread, with cheddar cheese, apple chunks, sprouts, Tuna sandwich takes on a whole new meaning.  I can buy bulk jell-o from Troyer’s Amish store, and the carrot sticks are from CNY Bounty.

PIZZA!

Saturday

Roast Chicken, peas, potatoes & Bread.
